This coffee comes from Quindió, this department is renowned for its fertile and healthy lands which have been fortified over the years thanks to the work of experienced farmers, their determination and perseverance in producing the highest quality coffees.
For this coffee, the viscous substance that surrounds the beans is removed after a fermentation bath that will last between 12 and 24 hours. During this step, the taste of each grain will develop and deepen. This is the reason why this working method is mainly used on coffees considered to be the finest.
Following this bath, we remove all of the grains for an intense washing before drying to reduce the humidity as much as possible. The coffee is then sun-dried for 5 to 10 days on large, smooth brick or concrete surfaces called patios.
